red lentil soup

 

how to prepare red lentil ?



ingredient:

  • 3 celery ribs 1 medium yellow onion
  • 14 cup olive oil 6 garlic cloves
  • 1 cup water 2 quarts vegetable broth
  • 1 pound red lentils, split
  • 12 tablespoons paprika, smoked
  • 1 teaspoon kosher salt 12 tablespoons lemon zest
  • black pepper, freshly ground
  • For serving, use Greek yogurt or sour cream (or vegan cashew cream).
  • Cilantro, to be used as a garnish


Instructions:

Carrots should be peeled. Carrot, onion, and celery should all be finely diced. Garlic should be minced.

Heat the olive oil in a big pot or Dutch oven over medium heat. Sauté the onion, carrots, and celery for 5 to 7 minutes, or until the carrots are soft.

Sauté for 1 minute after adding the garlic. Add the broth, water, red lentils, and salt and pepper to taste.
